RECIPE # 5107 - RASPBERRY BITES & JALAPENO CORN MUFFINS - Wed. Dec. 17, 2013

RASPBERRY COCONUT BITES

 

1 ¾ c all-purpose flour

1 c brown sugar

½ c butter, softened

1 (7-oz) pkg sweetened flaked coconut

¾ c sugar

6 T all-purpose flour

4 egg whites

1 t almond extract

½ c  raspberry, strawberry or blackberry jam

 

Combine flour, sugar and butter in a bowl and mix completely.  Line an e-inch square pan with aluminum foil, folding over edges. Coat foil with vegetable spray.  Press crust mixture into the bottom of the pan.  Bake crust at 350F for 8-10 minutes.  Remove from oven and let cool slightly.  In a large bowl stir together coconut, sugar and flour; add egg whites and almond extract and mix completely.  Carefully spread coconut mixture on top of crust.  Drop small spoonfuls of jam on top of coconut mixture and gently swirl with a knife to marbleize.  Bake cookies in a 350F oven for 25-30 minutes or until edges become slightly brown.  Let cookies cool completely.  Cut into bite-size cookies.  Yield:  36 bites.  (Cut square into four quarters and then cut each quarter into thirds both vertically and horizontally.)

 

 

JALAPENO CORN MUFFINS

 

3 eggs

1 (15-oz) can cream style corn

¼ c butter

1 c chopped onion

1 c skim milk
2 c self-rising yellow corn meal mix

1 c self-rising flour

2 c shredded sharp cheddar cheese

1 (4-oz) can diced green chilies

2 T chopped jalapeno pepper

Combine eggs and corn in a large bowl and stir to mix.  In a small bowl microwave butter and onion for 1-2 minutes; add to egg mixture and stir.  Add milk to batter and stir while adding corn meal, flour, cheese, chilies and jalapeno pepper. Continue stirring to mix completely.  Coat mini muffin tins with vegetable spray.  Fill muffin cups to top with batter.  Bake in a preheated 400F oven for 15-18 minutes or until slightly golden brown.  Yield:  5 dozen muffins.  **May bake in a rectangular pan and cut into bite-sized squares.  **Serve plain or with pulled pork barbeque, pork tenderloin or turkey.
