RECIPE # 5109 - RED VELVET CHESS SQUARES, Friday, December 20, 2013

IRENE LONG / IRENE'S OLD FASHIONED HOMEMADE CAKES

 

2 sticks butter or margarine

2 c sugar

2 large eggs

1 tablespoon vegetable oil

1 tablespoon white vinegar

2 tablespoons cocoa powder

3 tablespoons red food coloring

2 cups all-purpose flour

3 teaspoons baking powder

2 teaspoons vanilla

baking spray

Cream cheese topping (see directions below)

 

DIRECTIONS:

Preheat oven to 325 degrees.

Cream together first four ingredients:  butter, sugar, eggs and vegetable oil.

Add vinegar, cocoa powder and red food coloring.  Mix well or until evenly colored and fluffy.

Add flour, baking powder and vanilla.  Mix well all ingredients.

Spray 12x18, 2-inch deep sheet pan with baking spray.

Put mixture in pan in sections

Sprinkle flour on hands and on top of mixture (because the dough will be a little sticky).  Then press out evenly like a pie crust.  Set aside.

 

CREAM CHEESE TOPPING

INGREDIENTS:

2 -8 ounce bars cream cheese, softened

1 -2 pound bag powdered sugar

6 large or jumbo eggs

2 teaspoon vanilla

DIRECTIONS:

Cream the cheese, add sugar gradually. Add eggs one at a time. Add vanilla. Mix well until creamy, pour over dough.  Bake 1 hour.

Let cool, cut into desired squares.
