RECIPE # 5110 - STIR FRY LETTUCE WRAPS - Thursday, January 2, 2014

1 lb tilapia fillets

1/3 cup water

2 T lite soy sauce

2 t cornstarch

1/2 t ginger

1/4 t pepper

1/8 t crushed red pepper flakes

1 clove garlic, minced

2-3 T water

1 (12-oz) pkg frozen stir-fry vegetables

2 T chopped green onions

1 head Bibb lettuce, washed and leaves separated


Cut fish fillets into 1-inch pieces.  Coat a non-stick skillet with vegetable spray and heat until hot.  Add fish pieces and cook, for 2-4 minutes, turning pieces, until fish becomes opaque.  Remove from skillet and keep warm.  In a small bowl combine 1/3 cup water, soy sauce, cornstarch, ginger, pepper, red pepper flakes and garlic; mix completely; set aside.  Add 2-3 tablespoons water to frozen vegetables and cook over medium-high heat, stirring regularly for 5-6 minutes or until vegetables become crisp tender.  Add cornstarch mixture and stir until thickened.  Return fish pieces to skillet and toss gently to heat.  Assemble lettuce wraps and sprinkle with chopped green onions.  Yield:  4 servings.    *** Recipe could also be served over brown rice instead of as lettuce wraps.
