RECIPE # 5138 - SMOKIN' JOE'S CATFISH WRAPS - Friday, February 28, 2014

8 oz Smokin' Joe's Fish Batter (Original or Cajun)

4-5 oz Catfish Filet

3 - 10 oz Flour Tortilla

1/2 Cup Shredded Lettuce

3 Stick of Asparagus or Fresh Green Beans

3 T Pico de gallo or Creole Mix

1/3 Cup Shredded Cheese (Cheddar or Your Favorite Cheese)

3 Fresh Green Onions

3 T Smokin' Joe's Gourmet Tartar Sauce (Original or Cajun)

Preheat vegetable oil in large skillet to 325 degrees. Cut Fish Filet into three vertical

one inch strips, wash fish and shake off excess water and coat with Smokin' Joe's Fish

Batter, place coated fish in preheated oil. Cook for 3-4 minutes on each side (until

golden brown). Place cooked fish on paper towel to drain of excess oil.

On the center of the 3 flour tortilla place equal amounts of the following ingredients:

lettuce, cooked fish filet, asparagus, fresh green onion, pico-de-gallo, cheese and Smokin'

Joe's Gourmet Tartar Sauce, fold one end of the tortilla over the ingredients and the other

end of the tortilla on top of that and stick tooth pick down the center of the tortilla to hold

it together.

Makes 3 Catfish Wraps
