RECIPE #5162 - PASTA WITH BACON & GOAT CHEESE, Monday, April 21, 2014

1 c pasta ( prepared; reserve a bit of cooking water)
2 strips of bacon (rendered & chopped)
1tsp garlic (minced)
1tsp shallot (minced)
Pinch of chile flake
1Tbsp. olive oil
1 Tbsp butter
White wine
Chicken or vegetable stock
1Tbsp. goat cheese (or other cheese) to top
Instructions
-    In a saute pan, heat olive oil with garlic, shallots & chile flakes over medium heat.
-    Add ramps & bacon
-    Deglaze with white wine
-    Add cooked pasta and a little pasta water or chicken / vegetable stock
-    Toss to coat pasta
-    Reduce heat & add 1Tbsp of butter to finish 
-    Remove from heat & transfer to serving dish
-    Top with goat cheese (or other cheese of your choice)
