RECIPE # 5167 LOVELESS CAFE'S SIGNATURE RUB Fri. May 2, 2014

GEORGE HARVELL / LOVELESS CAFE SENIOR PITMASTER 1/4 C. Seasoning Salt

1/4 C. Granulated Garlic

1/4 C. Chili Powder

1/4 C. Black Pepper (ground)

1/4 C. Paprika

1/2 C. Whole Oregano (dried)

1/8 C. Onion Powder

3/4 C. Cajun Seasoning

1/2 C. Dark Brown Sugar

In a medium bowl, mix by hand the first eight ingredients thoroughly. Then add the brown sugar and be sure to "knead" it into the rub until all the larger particles of sugar are well incorporated. The brown sugar, being moist, has a tendency to lump up and therefore will not stay on the meat if not blended well into the rub. Yields 3 cups.
