RECIPE # 5187 - LUCKY RED CABBAGE RELISH - Friday, June 13, 2014

Colorful Cabbage Relish

4 cups chopped or thinly sliced red and green cabbage

1 medium green bell pepper, chopped

1 cup celery, chopped

1 jar (4 oz) pimiento, chopped

¼ cup light brown sugar

¼ cup apple cider vinegar

1 teaspoon salt

½ teaspoon celery seed

½ teaspoon whole mustard seed

Combine the cabbage, bell pepper, celery and pimientos in a large bowl.  Combine sugar, vinegar, salt, celery seed and mustard seed in a small bowl.  Stir until sugar dissolves.   Pour dressing over cabbage mixture.  Blend well.  Refrigerate before serving.  Holds for several days in refrigerator and improves flavors.

Makes about 5 cups.
