BRUSCHETTA

Chef Joe Borruso/Sbarro

Ingredients:
2 lbs ripe plum tomatoes, finely chopped
6 oz red onions, finely chopped
8 oz Mozzarella cheese, finely chopped
1/2 oz basil, finely chopped
4 oz olive oil
1/2 oz fresh garlic, finely chopped
2 t salt
1 t black pepper
16-24 toasted bread slices,  1/4-inch thick

Directions:
1. Wash all vegetables.
2. Chop all ingredients and place into mixing bowl.
3. Add oil and spices to mixing bowl.
4. Toast bread in oven for 2 to 3 minutes or until golden in color.
5. Top bread with mixture and serve.
