GRILLED VEGETABLE SALSA WITH SEASONED PITA CHIPS

Ingredients:
1 pkg. pita bread (cut into 1/8s)
1/4 c olive oil
1 T seasoned salt

Salsa
1 lb. green zucchini squash
1 lb. yellow squash
1 each red, green & yellow bell pepper
1 each large red onion
2 jalapeno peppers
1/4 bunch cilantro
2 lbs. red ripe tomatoes
2 T olive oil
Hot sauce to taste
Salt, pepper & cayenne to taste

Directions:
Cut pita bread with a sharp knife on a cutting board.  Place in a mixing bowl and sprinkle with oil and seasoning salt.  Toss until chips are coated. Place on a baking sheet and bake in a 400 degree oven for 5 to 7 minutes.  Remove from oven and cool.

Slice squash into long flat strips. Cut peppers in half and remove seeds.  Peel onion and slice in half.  Coat lightly with olive oil.  Place on hot grill and grill until tender.  Dice grilled items into small pieces.  Dice tomatoes into small pieces.  Combine all ingredients in a large mixing bowl and add spices to taste.  Chill, garnish and serve.
