1 can (8 oz) mandarin oranges
1/4 c red wine vinegar or cider vinegar
1/4 t salt
1/4 t black pepper
1 T honey
2/3 c vegetable oil

Drain the oranges and put them in a blender or food processor. Add the vinegar, salt, and black pepper. With the motor running, add the honey and oil in a thin stream through the feed tube. Process until thoroughly blended. Serve at once or cover and refrigerate until ready to serve, up to 2 weeks. (If the dressing separates while standing, shake it well to recombine before serving.)

Makes 1 ½ cups
