TAN POPO - SEASAME RICE NOODLE SALAD

Ingredients:
1 pkg rice noodles
3 oz soy sauce
3 oz rice wine vinegar
6 oz sesame oil
2 oz peanut butter
1 T honey
2 T fresh ginger, minced
1 T fresh garlic, minced
1 t crushed red pepper
1 bunch cilantro, coarsely chopped
12 scallions, thinly sliced
2 carrots, grated
black and white sesame seeds

Directions:
Soak rice noodles in boiling hot water for 5 minutes, drain and let cool.  Mix remaining ingredients and toss in noodles.  Serve cold or room temperature.
