Ingredients:Salad ingredients1 bag Boston or butter lettuce1 pt. raspberries1 kiwi, sliced4 green onions, sliced1 10-oz. can mandarin oranges2 T sugar1 2-oz. bag slivered almonds
Dressing ingredients1/4 c mango juice or pureed mangos2-3 T sugarjuice from 1/2 lime1 T rice wine vinegar1-2 T canola oil5 drops Tabasco1/4-1/2 t crushed red pepper flakesDirections:Combine salad greens and fruit in salad bowl. In a saucepan, heat sugar and almonds over medium heat, stirring constantly until caramelized. Cool, then sprinkle over salad.
To make the dressing, combine all ingredients. Best if made several hours ahead of serving time. Will keep in the refrigerator for up to two weeks.
