Ingredients:
4 vidalia onions, peeled
4 beef bouillon cubes
½ c dry, toasted bread crumbs
¼ shredded cheddar cheese, Parmesan cheese or favorite cheese
Directions:
Hollow inside of onion slightly, making sure not to cut through the bottom of the onions. Use removed onion pieces for other recipes. Place bouillon cube in bottom of each onion; pack with bread crumbs. Cover each onion with plastic wrap and microwave on HIGH for 4-6 minutes or until onions feel almost tender. Wrap each individual onion in a square of heavy duty foil. Sprinkle 1 T of shredded cheese on top of onion. Seal foil packet tightly. Place over medium heat on grill. Cook an additional 20-25 minutes, depending on size of each onion.
