RECIPE # 3922 - TORTILLA SOUP - Wed., November 29, 2006


2 T olive oil
1 onion, chopped
3-4 cloves garlic, minced
1 (32-oz) package chicken broth
1 c water
2 c chopped or shredded, cooked turkey or chicken
2 c salsa
1 (15-oz) can petite diced tomatoes
1 (15-oz) can black beans, rinsed and drained
2 t cumin
Tortilla strips or chips

Heat oil in large saucepan and saute onion for about 3 minutes; add garlic and continue cooking, stirring constantly, for another 2-3 minutes.  Add chicken broth, water, turkey or chicken, salsa, tomatoes and black beans.  Bring to a boil, reduce heat and cook over low heat for about 15-20 minutes.  Serve in bowls and top with tortilla strips or chips.  Yield:  6-8 servings.  **Additional condiments:  sour cream, shredded cheese
