CLASSIC COCOA AND CHOCOLATE MIX
1 cup granulated sugar
1 cup unsweetened cocoa powder
1 cup powdered milk
1/2 cup miniature semi-sweet chocolate chips
2 teaspoons kosher salt
Marshmallows
Combine the sugar, cocoa powder, powdered milk, chocolate chips, and salt in a large bowl. Pour into a 1 quart airtight container.
For a single serving, pour 1 cup boiling water over 1/3 cup of the mix. Stir until the chocolate chips have melted and the mixture is smooth. Top with marshmallows.
Makes one quart of mix, yields 12 servings
PEPPERMINT PATTY HOT CHOCOLATE
2 cups half-and-half
12 chopped small-size peppermint patties
2 tablespoons arrowroot
Fresh mint
Heat half-and-half in a medium saucepan over medium heat until you begin to see bubbles along the side.
Whisk in peanut butter, continuing to whisk until smooth.
Whisk in the cocoa powder and cornstarch. Let the mixture come to a boil whisking constantly.
If small nuts are not desired, for instance when serving to children, please strain.
Let cool slightly before serving. Top with whipped cream and chopped Snickers bars or other candy pieces as desired.
Serves 4 to 6
