3 c barley 3 t lite sesame oil 1 med. onion, diced 6 shitake mushrooms, sliced thin 1 c buttom button mushrooms, sliced thin 5-6 c water or chicken or beef stock 2 ribs celery, sliced thin 2 green onions, sliced thin, for garnish tamari sauce or soy sauce to taste
Heat sesame oil in soup pot at medium heat. Add onion and celery and cook for 5 minutes. Add Mushrooms and cook 2 minutes more. Add water or stock and barley, and bring to a boil. Reduce heat to low and cook about 40 minutes until barley is soft. If barley starts to stick, use a flame deflector and stir occasionally. Once barley is soft, the soup is done. Season with tamari or soy sauce and garnish with green onions.
