RECIPE # 3973 - WALKING SHRIMP CAESAR SALAD - Thursday, April 5, 2007

12 large shrimp (cooked, peeled and deveined) 1 head Baby Bibb or Romaine lettuce 1 c shredded parmesan cheese 1/2 c grated parmesan cheese 1 c Caesar salad dressing 1/2 c Italian dressing 1 c croutons
12 shot glasses or votive holders 12 food picks
Place shrimp in Italian dressing and marinate for at least 1 hour. Remove shrimp from the marinade and place in a roasting pan. Sprinkle the shrimp with the grated parmesan. Sprinkle again with the shredded Parmesan. Place in a 350 degree oven for 5 minutes. Remove from oven and let rest .
Break apart the lettuce leaves and wash. Fill each shot glass with a half ounce of dressing. Place a leaf in each glass, stem side down. Skewer three croutons on 12 picks and place in glasses. Hook a shrimp on each glass and serve.
