APRICOT AND WHITE CHOCOLATE MUFFINS
1 c chopped dried apricots
1 c boiling water
2 c all-purpose flour
3/4 c sugar
1 t baking soda
1/2 t salt
1/4 c melted butter
1/4 c oil
1 c buttermilk
1 egg
3/4 c white chocolate
chips
1/2 c chopped pecans (optional)
Place apricots in small bowl and pour boiling water over. Let stand for 5 min. Stir together the flour, soda and salt in a medium bowl. In a separate bowl, mix the butter, oil, buttermilk, and egg. Pour the wet ingredients into the dry ingredients. Drain water from the apricots and add them to other ingredients. Mix just until blended. Stir in white chocolate chips and nuts. Spoon into muffin tins lined with paper cups. Bake 400 degrees for approximately 15 to 20 min, or until top springs back when lightly pressed.
