6 fresh squash, sliced
1 onion, sliced
2 c shredded cheddar cheese
2 sticks butter
2 eggs
2 sleeves crushed saltine crackers
1 T Salt
1 T Pepper
1 t Sugar
In sauce pan, place sliced squash and 1/2 cup water, along with butter, a dash of salt, pepper, and sugar and boil on medium-high heat with lid on. Add sliced onions half way through the cooking process cover and cook until squash is tender.
Pull off of heat and blend in eggs, cheese and crushed saltine crackers. Mix well. Place in greased casserole pan and cook in oven at 375 for 20-25 minutes or until lightly brown.
Monell's Sautéed Squash
6 fresh squash, sliced
1/2 onion, sliced
1/2 c bacon grease
2 T sugar or to taste
1 T. salt
In hot skillet or frying pan, place bacon grease till hot. Add sugar and salt and blend in grease. Add sliced squash and onions. Sugar will caramelize the onions and the squash. Cook until tender and glazed. Add additional salt and sugar to taste for that sweet and salty flavor. Enjoy
