Fruit Filling
1/4 c (1/2 stick) butter
1 c sugar
1/3 c whiskey
3 T all-purpose flour
10 c sliced, peeled fresh peaches and blackberries
Dumplings
2 c self-rising flour
1/4 c sugar
3/4 c milk
5 T butter, melted
1/2 t vanilla
Directions for Fruit filling: Heat oven to 425 degrees. Melt the butter in a 12 inch cast-iron skillet. Stir in sugar, whiskey and flour; blend well. Stir in the fruit and simmer over medium-high heat while preparing the dumplings
Directions for Dumplings: Combine the flour and sugar in a medium mixing bowl. Stir in the milk, butter and vanilla just until a soft dough forms. Drop by tablespoonfuls over the warm fruit. Bake about 15 minutes or until the dumplings are lightly browned. Serve warm or at room temperature with ice cream, whipped cream, or drizzled with heavy cream.
Makes 10 to 12 servings
