
HELEN SCOVILLE/JUNIOR LEAGUE OF NASHVILLE
3 c cooked fresh white corn kernels
2 tomatoes, chopped
1 green bell pepper, chopped
1 small purple onion, chopped
1 cucumber, peeled and chopped
SUMMER SALAD DRESSING
½ c sour cream
¼ c mayonnaise
2 T white vinegar
2 t sugar
½ t celery seeds
½ t dry mustard
2 t salt
½ t pepper
For the dressing, combine the sour cream, mayonnaise, white vinegar, sugar, celery seeds, dry mustard, salt and pepper in a bowl and mix well.
For the salad, combine the corn, tomatoes, bell pepper, onion and cucumber in a bowl and mix gently. Add the salad dressing and toss to coat well. Chill covered until serving time.
