1 small head green cabbage
1 green bell pepper, finely diced
1/2 t salt
1/4 t freshly ground black pepper
1/2 c cider vinegar
1/3 c sugar
2 T olive oil
Shred cabbage using the shredding disc of a food processor, or finely shred by hand. Place in a large bowl and toss with the green pepper, salt and black pepper.
In a small bowl, whisk together the cider vinegar, sugar, and olive oil. Stir the dressing into the cabbage mixture, cover, and refrigerate for several hours or overnight. Serve cold or at room temperature.
You can prepare the slaw the night before the tailgate and refrigerate, or shred the cabbage and dice the pepper the night before and assemble the slaw in the morning. It is better made a least a few hours ahead, to give the dressing time to soak into the cabbage.
