SPINACH SALAD WITH FRESH STRAWBERRIES
1 (8-10-oz) pkg fresh baby spinach
1-1 1/2 c sliced fresh strawberries
1 c coarsely chopped, toasted pecans
1 small red onion, thinly sliced
Reduced-fat strawberry or raspberry vinaigrette dressing or poppy seed dressing
Combine ingredients and toss with dressing. Yield: 4-6 servings
FROZEN CRANBERRY SALAD
1 (16-oz) can whole berry cranberry sauce
1 (8-oz) container plain yogurt or low-fat sour cream
1 (8-oz) can crushed pineapple, drained
1/2 c chopped walnuts or pecans
Combine all ingredients in bow; stir to mix. Pour into muffin tins lined with paper or foil cupcake liners. Freeze. Pull paper off salads before serving. Yield: 9 servings.
