2 pkg. (8 oz. each) cream cheese, softened
3/4 c canned sweet potatoes
1/2 c sugar
1/2 t ground cinnamon
Dash of ground cloves
Dash of ground nutmeg
2 eggs
1/2 t vanilla
1 graham cracker pie crust (6 oz.)
3/4 c pecan pieces
2 T maple-flavored or pancake syrup
Preheat oven to 350 degrees. Beat cream cheese, sweet potatoes, sugar and spices with electric mixer on medium speed until well blended. Add eggs and vanilla; mix just until blended. Pour into crust. Sprinkle with pecans. Bake 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight. Drizzle with syrup just before serving. Store leftover cheesecake in refrigerator.
APPLE DUMPLINGS
1 pkg. pastry dough
6 Granny Smith apples pared and cored
1 c sugar
1/2 c brown sugar
1 t cinnamon
1/2 t nutmeg
melted margarine
walnuts (optional)
carmel sauce (optional)
Mix sugars and spices put aside. Place an apple on pastry sheet Brush apple with magarine. Pour sugar mixture and nuts or carmel into apple core. Wrap apple with pastry dough. Wet to seal. Bake 30 minutes. Drizzle with sugar and carmel sauce.
