MICROWAVE PEANUT BRITTLE
1 c sugar
1/2 c light corn syrup
Dash salt
1 1/2 c shelled peanuts
1 1/2 t baking soda
1 t vanilla extract
Butter a baking sheet well. Combine sugar, corn syrup and salt in a 3-quart glass bowl. Stir in peanuts. Microwave on HIGH (100% power) until light brown, 8-10 minutes, stirring twice. Stir in remaining ingredients until light and foamy. Quickly spread as thin as possible on prepared baking sheet. Cool; break into pieces. Yield: 1 pound
HOLIDAY PRETZEL CANDY
1/2 c white chocolate chips
18 pretzel rods
Red, green and white candy sprinkles
Place white chocolate chips on a plate, cover with plastic wrap and microwave on HIGH for 1 minute. Carefully remove plastic wrap and stir with a fork until chips are smooth. Dip one end of pretzel rods in chocolate mixture and hold over separate plate and sprinkle with candy sprinkles. Stand rods up in a coffee mug and chill in refrigerator until firm. Yield: 18 pretzel candy rods.
