RECIPE # 4126 - SWEET POTATO MUFFINS - Monday, April 7, 2008

1 1/2 c self-rising flour

3/4 c + 2 T sugar, divided

1 t cinnamon

1/4 t nutmeg

1/4 t ginger

1/3 c vegetable oil

2 eggs, beaten

2 T whiskey, optional

1 c mashed cooked sweet potato or pumpkin puree

1/2 cup chopped toasted pecans

Heat oven to 375 degrees. Grease 12 muffin cups or 24 mini muffin cups. Combine flour, 3/4 cup sugar, cinnamon and nutmeg in a large mixing bowl and blend well. Stir in oil, eggs, whiskey and sweet pecans and remaining sugar. Bake 15 to 20 minutes for regular muffins; 10 to 13 minutes for mini muffins. Makes 12 regular or 24 mini muffins.
