Mediterranean Layered Dip
This captivating dip layered with fantastic flavors is a showstopper. This make-ahead recipe doubles easily for a larger group.
8 servings/serving size: 1/2 cup
1 (7-ounce) container hummus
1 cup coarsely chopped fresh baby spinach
1/2 cup chopped tomatoes
1/2 cup chopped cucumber
1/4 cup chopped red onion
1/4 cup crumbled reduced-fat feta cheese
2 tablespoons sliced black olives
1. Spread the hummus on a 9-inch serving plate.
2. Sprinkle evenly with the remaining ingredients and refrigerate until serving time.

Two-Minute Banana Tiramisu
Bananas, whipped topping and chocolate chunk cookies create this so simple sensational rich wonder. This might be the easiest and best dessert ever!
Makes 10-12 servings
14 chocolate chunk Pepperidge Farm cookies
1/3 to 1/2 cup coffee liqueur, depending on taste
4 bananas, sliced
1 (12-ounce) container fat free frozen whipped topping, thawed
Cocoa or chocolate shavings
Pour the liqueur into a bowl and quickly dip each cookie, then use seven cookies to line the bottom of a 10-inch square dish. Layer half of the banana slices over the cookies and cover with half of the whipped topping. Repeat layers. Sprinkle with cocoa.
To Prepare and Eat Now: Slice and serve
To Freeze: Cover with plastic wrap and freeze.
To Prepare After Freezing: Defrost, slice, and serve
