RECIPE # 4138 - BUTTERMILK PIE & LEMON CHESS PIE - Wednesday, May 7, 2008

LEMON CHESS PIE

1 3/4 c sugar

1 T all-purpose flour

1 T cornmeal

1/4 c butter, melted

1/2 c milk

1/4 c fresh lemon juice     

2 T grated lemon rind

4 eggs, beaten

 Unbaked (9-inch) pastry shell

Combine sugar, flour and cornmeal; stir to combine.  Add butter and milk, mixing well.  Add lemon juice, lemon rind and eggs; mix completely. Pour filling into pastry shell.  Bake at 350 F for 40-45 minutes or until pie tests done..  Yield:  one 9-inch pie.

BUTTERMILK PIE

1 1/2 c sugar

2 T cornmeal

1/2 c butter, melted

1/2 c buttermilk

3 eggs, beaten

1 t vanilla

1 unbaked (9-inch) pastry shell

Stir together sugar and cornmeal in a large mixing bowl.  Add butter, buttermilk, eggs  and vanilla to bowl; mix completely.  Pour filling into pastry shell.  Bake for 40-45 minutes or until knife inserted comes out clean.  Pie will continue to set as it cools.  Yield: one 9-inch pie.
