FRUIT CHEESECAKE TRIFLE
1 (12-oz) box vanilla wafers
2 (1-oz) pkg sugar free cheesecake instant pudding and pie filling mix
4 c lowfat or skim milk
1 (14-oz) can fat-free sweetened condensed milk
1 (8-oz) container frozen lite whipped topping, thawed
1 qt fresh strawberries, sliced
4 bananas, sliced
Place milk in a large mixing bowl and add cheesecake pudding mix. With a wire whisk or an electric mixer, beat to combine. Stir in sweetened condensed milk and whipped topping; mix until smooth. In a large serving bowl place 1/2 vanilla wavers on bottom and sides of bowl. Pour in 1/3 of filling. Top with half of strawberries and bananas. Spread another 1/3 of filling mixture on top of fruit. Add remaining vanilla wafers (reserving a few for garnish) , strawberries (reserve 1 whole berry for garnish) and bananas. Finish trifle with remaining filling. Garnish with a few vanilla wafers and a fresh strawberry. Yield: 6-8 servings. **Fresh peaches or blueberries may also be used.
