RECIPE # 4170 - SUMMERTIME CRAB SALD WITH LEMON VINAIGRETTE - Wednesday, July 23, 2008

SUMMERTIME CRAB SALAD

1 (6-8-oz) pkg mixed salad greens

1 1/2 c crab flavored seafood, flaked

1 avocado, peeled and wedged

1 tomato, wedged

Favorite salad dressing

Divide salad greens on 2 plates.  Mound flaked crab in center of greens.  Place wedges of avocado and tomato alternately around rim of plate.  Drizzle with favorite dressing or Lemon Vinaigrette.  Yield:  2 servings.  **Sliced cucumbers may be used on salad.

LEMON VINAIGRETTE DRESSING

1/2 c olive oil

1/3 c fresh lemon juice

1 1/2 t sugar

1/2 t Dijon mustard

2 T fresh snipped thyme

1/4 c chopped scallions (mostly green tops)

1/2 t salt

1/4 t pepper

Combine all ingredients in a jar, screw on lid and shake to mix completely.  Yield:  about 3/4 c dressing.
