RECIPE # 4181 - PEACHES & CREAM PIE - Wednesday, August 13, 2008

1 (10.5-oz) pkg miniature marshmallows

1 T lemon juice

2 T orange juice

1/2 pint whipping cream

2 c fresh cut, peeled peaches

1 9-inch graham cracker crust

Place marshmallows in a large glass bowl; cover with plastic wrap and microwave on HIGH for 1 1/2 minutes.  Stir until smooth. Add lemon juice and orange juice and stir to mix completely; set aside.  Place whipping cream in a bowl and whip until soft peaks form.  Fold peaches into whipping cream.  Add peaches and cream to marshmallow mixture.  Pour into 9-inch graham cracker pie shell.  Refrigerate 2-3 hours until pie is set.  Yield:  1 9-inch pie.
