BRIGITTE HOHMAN / GRACEY'S GOURMET COOKIES
4 cups flour
4 tsps. baking soda
2 tsps. cinnamon
1 tsp. ground ginger
1 tsp. ground cloves
(mix all and set aside)
3 sticks of margarine
1/2 cup molasses
2 cups sugar
2 eggs
Melt the margarine, add to the eggs, molasses, and sugar. Fold in dry mixture. Store in a plastic container. Refrigerate for at least 3-4 hours. Line cookie sheets with parchment paper and use a scoop to roll out balls. Dip ginger balls into sugar and place on cookie sheet. Bake at 350 degrees for 9-10 minutes. Take out when cookies are high and puffy.
Buttercream Frosting
1 stick plus 3 tsp. butter
1/2 tsp. vanilla
1 egg yolk
1/2 tsp baking soda
2-2/3 cup confectioners sugar
1 tbsp. milk
Melt butter and add to egg, soda, vanilla and milk. Gently add the confectioners sugar. Beat until creamy.
