Speedy Chili
The chipotle salsa gives this excellent, easy-to-make chili a rich, smoky flavor that's hard to beat. If desired, serve with shredded reduced fat cheddar cheese and chopped red onions.
8 servings/serving size 1 cup
2 pounds ground sirloin
1 teaspoon minced garlic
1 tablespoon chili powder
1 teaspoon chipotle chili powder (opitonal)
1 teaspoon ground cumin
1 (16-ounce) jar chunky salsa
1 cup frozen corn
2 (141/2-ounce) cans fat free low-sodium beef broth
1 (15-ounce) can red kidney beans or black beans, rinsed and drained
1. In a large nonstick saucepot, sauté the beef and garlic over medium heat until browned, about 4-5 minutes. Drain any excess liquid.
2. Add the remaining ingredients and bring to a boil, then reduce heat, and cook for 15 minutes.

Roasted Pepper and Mozzarella Salsa
Buy a jar of roasted peppers and a package of shredded Mozzarella cheese, add a few ingredients, and you have thrown together a quick, tasty dip. Serve this with crackers or chips.
16 servings/serving size: 2 tablespoons
1 cup shredded part-skim Mozzarella cheese
1 cup jarred roasted red peppers, drained and chopped
1 cup chopped green onion
1 1/2 teaspoons dried basil leaves
1 teaspoon olive oil
Salt and pepper to taste (optional)
1. Mix all ingredients together in a medium bowl and refrigerate until ready to serve.
Terrific Tidbit
Roasted peppers are found in jars-there's no need to roast fresh bell peppers!

Peanut Butter Cookies
Yes, these simple ingredients create a dynamite peanut butter cookie!
30 servings/serving size: 1 cookie
1 cup crunchy peanut butter
1/2 cup light brown sugar
1 egg
1/2 teaspoon baking soda
1/4 cup chopped peanuts
1. Preheat the oven to 350 degrees.
2. In a large bowl, combine the peanut butter, sugar, egg, and baking soda until well combined. Stir in the peanuts.
3. Place dough by teaspoonfuls on a nonstick baking sheet and press down with a fork to form ridges. Bake for 12-14 minutes or until lightly browned.
Terrific Tidbit
Use a lightly floured fork to keep it from sticking to the cookie batter when you make the ridges in the cookies.
