*Pecan Butter Cookies: You can cut this recipe in half for a smaller batch, or make it all and freeze half of the batter to cook at another time.
2 pounds butter
3 cups brown sugar
3 cups pecan pieces
8 cups flour
1 teaspoon salt
2 teaspoons vanilla
1 cup powdered sugar
Cream brown sugar and butter. Add remaining ingredients (except powdered sugar) and mix well. Scoop and place on a lined baking sheet or roll into logs, chill and slice. Bake in a preheated 350 degree oven until lightly-browned. OPTIONAL: Toss cool cookies in powdered sugar for added sweetness.
