PEPPERMINT SUGAR COOKIES
3/4 c butter, softened to room temperature
3/4 c sugar
1 t vanilla
2 c all-purpose flour
1/2 c crushed peppermint candy
In a large bowl cream butter and sugar together. Add egg and vanilla and beat to mix. Stir in flour and mix until smooth. Stir in peppermint candy. Roll dough into 1-inch balls and place on cookie sheet. Press 3-4 chocolate chips in center of each cookie or a chocolate kiss. Bake in preheated 350 F oven for 12-15 minutes. Yield: 4 dozen cookies.
1 (12-oz) pkg premium white chocolate morsels
3/4 c crushed peppermint candy
Place white chocolate in a large bowl and microwave on HIGH for 2-3 minutes, stirring halfway through cooking time. Remove from microwave and stir until chocolate is smooth. Stir in crushed peppermint candy. Spread on wax-paper lined baking shet.
Refrigerate 1 hour or until firm. Break into pieces. Yield: 1 pound candy.
