2 (16-oz) cans fat free refried beans
2 lbs lean ground beef
2 onions, chopped
2 (1-oz) pkg taco seasoning mix
1 (2-lb) loaf white pasteurized Mexican cheese
1 (10-oz) can diced tomatoes and green chilies
2 c shredded lettuce
1 cup salsa
1/2 c guacamole
1/2 c reduced fat sour cream
Spread refried beans in the bottom of an 11X13-inch casserole dish; set aside. Cook ground beef, onions and taco seasoning mix in a large skillet; drain any fat from mixture. Spread ground beef mixture on top of beans. In a large glass bowl heat in microwave on low the cheese and chilies; stir at 2-minute intervals until melted. Spread cheese over beef layer. Bake dip in a 350 degree oven for 20-30 minutes or until hot. Top with shredded lettuce,salsa, guacamole and sour cream dollops if desired. Serve with corn chips or tortilla chips. Yield: 12-15 appetizer servings.
