RECIPE # 4264 - ROASTED ARCTIC CHAR, Thursday, February 5, 2009

CHEF BUTCH RAPHAEL / WHOLE FOODS MARKET

4 (5 oz) boneless Arctic char filets

7 T soy ginger sauce

salt and pepper to taste

3/4 lb (about 5 cups) small broccoli florets

3/4 lb dried whole wheat linguine

1/3 c grated Asiago cheese (optional)

1/4 c lemon juice

  • - Preheat oven to 450 degrees. Arrange filets on a large plate, brush with 4 tablespoons of soy ginger sauce and season with salt and pepper. Toss broccoli, remaining 3 tablespoons of sauce, salt and pepper together in a large bowl.
  • - Arrange filets in a single layer on parchment paper-lined baking sheet then scatter broccoli around filets. Roast, stirring broccoli occasionally, until filets are just cooked through and broccoli is just tender, about 15 minutes.
  • - Meanwhile bring a large pot of salted water to a boil. Add linguine and cook until just tender, about 10 minutes. Reserve ½ cup of the pasta water, drain linguine and return to pot. Add reserved pasta water, cheese and lemon juice. Toss thoroughly. Divide linguine mixture among four plates, break filets into large flakes and scatter over the top with broccoli. Enjoy!
