RECIPE # 4277 - SPICY STUFFED PEPPERS - Wednesday, March 4, 2009



4 medium sized green peppers

1 lb lean ground beef

1 medium onion, chopped (about 1 cup)

1 t minced garlic

1 (16-oz) jar salsa (mild, medium or hot)

1/2 c plain breadcrumbs

1 1/2 c shredded cheddar cheese, divided

Slice green peppers in half vertically; remove core and seeds.   Place peppers, hollow side ups up, in a glass casserole dish; cover with plastic wrap.  Microwave on HIGH for 6-8 minutes or until very tender; drain liquid and set aside.  In a large skillet combine ground beef, onion and garlic; cook over medium-high heat until beef is cooked and onions become tender; drain.  Add salsa, breadcrumbs and 1 cup cheese to ground beef mixture; stir to mix.  Mound beef mixture in pepper halves.  Sprinkle with remaining cheddar cheese.  Bake in 350F oven for 20-30 minutes or until hot and cheese melts.  Yield:  4-6 servings.
