RECIPE # 4274 - BLACKENED REDFISH - Monday, February 23, 2009

10 t  blackening seasoning

1 t ground basil

1 t ground thyme

1 t garlic powder

1 t white pepper

1 t black pepper

1 t sea salt

1 t onion powder

2 t cayenne pepper

1 t paprika

1/4 pound butter

4 large fish filets, could use tuna or halibut

Mix all dry ingredients together.  Dredge filets through mixture. Place a large skillet over a high heat. Melt the butter.  Place the fish into the skillet.  Turn heat down to medium temperature.  Cook on both sides, approximately 7 minutes each.
