2 (6 1/2 -oz) cans albacore tuna ( white meat), drained 3 ribs celery, diced 1/3 c pickle relish 1/3 c finely chopped red onion 1/4 c Hellmans mayonnaise or to taste 1 T capers 1 T dried Tarragon Salt and pepper to taste
In a mixing bowl, break up tuna with a fork. Add remaining ingredients except salt and pepper and toss well. Season with salt and pepper.
Yield: 2 1/2 cups
This recipe may be used as a salad over greens, stuffed in a tomato or in a melon ring or as a spread with your favorite bread.
