The tradition of Hanukkah includes wonderful cuisine, and everything that is consumed is symbolic of the events taking place to celebrate it.
Latkes, or potato pancakes, are one of the most traditional Hanukkah foods. Here are some ways to make them not-so traditional.
Sweet potato latkes
What you’ll need:
1 lb. sweet potatoes, peeled
Salt and pepper to taste
2 eggs
¼ cup flour
¼ cup vegetable oil

How to make it:
Shred the sweet potatoes in a food processor until consistency of hashed browns. Add salt and pepper. Transfer to a bowl and add the eggs and flour and mix well. Use your hands and form a 2 ½ to 3 inch patty about ½ inches thick. In a cast iron skillet on the stove heat the oil and fry each latke on both sides, about 3 minutes each. Then let dry on a plate lined with a paper towel. Add more salt and pepper to taste.
Veggie-feta latkes

What you’ll need:
1/2 cups grated zucchini
1 cup peeled and shredded potatoes
1 cup shredded carrots
1/2 teaspoon salt
3 eggs, lightly beaten
salt to taste
freshly ground black pepper
3/4 cup matzo meal
1/2 cup chopped fresh parsley
1/2 cup crumbled feta cheese
1/4 cup vegetable oil
How to make it:
Place the zucchini, potato and carrots in a colander, place paper towels or cheesecloth over the top and squeeze out as much moisture as possible. Sprinkle salt over the vegetables and let them drain for 15 minutes. Squeeze vegetable again in paper towels. In a large mixing bowl combine eggs, vegetables, salt and pepper. Mix well. Stir in matzo meal or flour. Then add the parsley and feta. Heat vegetable oil in a large frying pan. Place vegetable mixture, formed into pancake sized cakes in hot oil in cast iron skillet and fry until golden brown on both sides. Cook two to three minutes per side. Add more oil as needed to keep cakes frying up well. Drain fried latkes on paper towels.

Tri-colored latkes

What you’ll need:
1 Yukon potato, peeled
1 sweet potato, peeled
1 beet, peeled
1/2 onion, peeled
1 egg
salt & pepper to taste
1-2 teaspoons chipotle chile pepper
neutral oil for frying
sour cream
horseradish
How to make it:
Shred all the vegetables in a food processer. Add the egg and spices and mix to combine. Heat enough oil in a large cast iron skillet to cover the bottom while forming the latkes. Cook the latkes 3-5 minutes on each side. Be really carefully when you flip them over because they are pretty tender. Mix sour cream and horseradish to taste and serve with cooked latkes.
Dessert apple latkes
What you’ll need:
4 apples: 2 red and 2 green. Peeled and shredded.
½ cup sugar
1 cup flour
½ tsp baking powder
Vegetable oil
How to make it:
Combine all ingredients and let sit in fridge for 20 minutes. Using a cast iron skillet heat the oil. Form 3-inch patties with your hands, about ½ inch thick. Fry in the oil for about 3-4 minutes. Cool off on a paper towel and sprinkle with powdered sugar.
