Finding a Kosher restaurant in Nashville has been nearly impossible. Now, there's a new option in town that's excited to serve the community.
Converting a menu is no easy task. "It was an idea by my executive chef, Anthony DeGeorge. He got in contact with the Rabbi Saul [Strosberg] and it was a three to four month process of getting Kosher certified. We had to go through all of our ingredients to make sure that they were Kosher, and we had to toss a lot of ingredients that weren't Kosher," said Annie Choo, Owner of AVO.
"AVO stands for avocado. We specialize in vegan food. We focus on the plant-based diet," she said.
Going Kosher means sticking to strict dietary rules.
"From cleaning the food, to how we cook the food, to how we present the food. The type of dishes that we use, the ceramics, everything has to be Kosher. I'm actually bringing in new plates, too," she said.
Choo said even customers who don't keep Kosher appreciate what they're doing.
"I've gotten a lot of really great responses," she said.
Choo said she's always experimenting. Her next project: vegan sushi.
