IRISH SODA BREAD

INGREDIENTS:

1 cup of plumped raisins (plump raisins in boiling water, drain and dry using paper towels)
1 cup of sugar
1 stick of softened butter
4 cups of flour
1 teaspoon baking soda
1 teaspoon baking powder
2 teaspoons cinnamon
1 teaspoon salt
2 1/2 cups of buttermilk

DIRECTIONS:

Knead the butter into the dry mix of flour, baking soda, salt and baking powder.
Mix in plumped raisins and then add sugar.
Mix in buttermilk.
Place in two well-greased bread pans.
Bake approximately 50 minutes at 350 degrees until golden brown and knife inserted in center comes out clean.
