Ann Cox Eastes from Kroger made Tropical Cheesecake Salad and a Fresh Veggie Salad with Avocado & Feta. 

TROPICAL CHEESECAKE SALAD

1 (16-oz) container of strawberries, halved and quartered

1 (10-oz) can mandarin orange segments, drained or use 2 fresh mandarin oranges

1 (20-oz) can pineapple tidbits, drained, or ½ fresh pineapple cubed

2 kiwi, peeled, sliced and halved

2 mangos, cubed

1 banana, sliced

1 T lemon juice

1 (8-oz) pkg cream cheese or Neufchatel cheese, softened

1/3 c powdered sugar

1 t vanilla

1 (3.4-oz) pkg instant cheesecake pudding or (1-oz) pkg sugar fee

1 ¾ c skim milk

Combine strawberries, oranges, pineapple, kiwi and mango. Combine banana slices and lemon juice in a small bowl; toss to mix. Add bananas to fruit mixture and set fruit mixture aside. Place softened cream cheese in a mixing bowl and beat with electric mixer until smooth. Add the powdered sugar and vanilla and beat until smooth. In a separate bowl combine dry pudding mix and milk and beat until smooth. Let mixture sit for a couple of minutes to thicken. Add pudding to cream cheese mixture and beat until smooth. Chill or serve immediately with the fruit. Yield: 8-10 servings

FRESH VEGGIE SALAD

1 cucumber, sliced and quartered

1-2 avocados, diced

1 ½ c chopped and drained tomatoes

¼ c chopped red or white onion

1 (8-oz) pkg shredded lettuce or favorite greens

2 t lemon pepper seasoning

2 T lemon juice

2 T olive oil

¼ c crumbled feta

In a large bowl combine cucumber, avocados, tomatoes, onion, lettuce and seasoning. Stir to mix. Add lemon juice and olive oil and stir to coat vegetables. Sprinkle with feta and serve. Yield: 6-8 servings Could also serve vegetable mix over shredded lettuce instead of mixing together.
