Asian Chicken Salad with Peanut Dressing

Ann Cox Eastes from Kroger made Asian Chicken Salad with Peanut Dressing. 

 

ASIAN CHICKEN SALAD WITH PEANUT DRESSING 

1 (16-oz) pkg cole slaw mix with shredded carrots 

½ c chopped red bell pepper or julienne sliced red bell pepper 

½ c snow peas, cut in half on the diagonal or thinly sliced 

½ c shredded red cabbage 

¼ c chopped green onions 

2 T chopped cilantro 

1 ½ -2 c shredded rotisserie chicken 

Peanut butter dressing 

2 T coarsely chopped peanuts 

 

Combine slaw mix, red bell pepper, snow peas, red cabbage, green onions, cilantro and chicken; toss to mix.  Add peanut butter dressing and toss to coat.  Sprinkle peanuts on top of salad and serve.  Yield:  4-6 servings 

 

Peanut Butter Dressing 

1/3 c peanut butter 

½ c chicken broth 

3 T lime juice 

1 T olive oil 

½ t curry powder 

½ t garlic powder 

½ t ground ginger 

¼ t salt 

1/8 t hot sauce 

Combine all ingredients in a bowl and beat with a wire whisk to combine to a smooth, thick dressing.  Yield:  About 1 cup
