Bananas Foster Pain Perdu from Ruby Sunshine

Monica Larousse from Ruby Sunshine made Bananas Foster Pain Perdu. (see recipe below) The sister restaurant to Ruby Slipper Cafe' in New Orleans, Ruby Sunshine will offer all day brunch at the new restaurant, located at at 231 Public Square, Franklin, TN 37064. Bananas Foster Pain Perdu

Ingredients

3 slices 1 inch cut French Bread
4 oz. foster sauce (see recipe below)
1 whole, ¼ inch sliced banana
1 oz. raisins
1 oz. liquid butter
Powdered sugar, as needed

Method

1. Apply 2 oz. liquid butter to 350-375 degree F griddle
2. Dip the slices of French bread in the French toast custard, do not soak bread, but lightly coast and transfer to griddle
3. Placed dipped French bread slices on griddle and cook until golden brown, about 2 minutes
4. Flip the browned French toast and allow it took cook for another 2 minutes or until golden brown and hot through the middle
5. While the French bread is cooking, heat up foster sauce in a nonstick skillet over medium heat. Add sliced bananas and raisins to foster sauce as it is heating. Heat sauce to 220 degrees F or until a few small bubbles appear. Remove from heat
6. Plate French toast pieces and spoon on sauce, including all bananas and raisins over toast

Foster Sauce:

1/4 cup rum

1/4 cup banana liqueur

2 Tbsp butter

2 Tbsp brown sugar

Melt butter in saucepan on stove top, add brown sugar, cook until sugar melts. Add in alcohol. Turn off heat for 3-5 minutes. Add your preference of caramel sauce.
