Breakfast Tortilla Pizza and Mini Breakfast Pizzas

Ann Cox Eastes from Kroger made Breakfast Tortilla Pizza and Mini Breakfast Pizzas. 

 

BREAKFAST TORTILLA PIZZA

1 (8-inch) regular or wheat flour tortilla

2 scrambled eggs

¼-1/3 c chopped cooked ham, bacon or sausage

1 T chopped green onions or 1 t dried chives

1/3 c shredded cheddar, mozzarella or favorite cheese

Place tortilla on baking sheet coated with cooking spray and spray top of tortilla with baking spray. Bake in a preheated 425F oven for 3-4 minutes. Remove tortilla from oven and spread scrambled eggs evenly over tortilla. Sprinkle with ham, onions and cheese. Return to oven and bake an additional 5-7 minutes or until cheese is melted. Cut into 4 wedges and serve. Yield: 1 serving

 

MINI BREAKFAST PIZZAS

 4 English muffins, split

½ c pizza sauce

¼-1/2 c chopped vegetables (green pepper, onions, mushrooms, etc)

8 thin slices ham, Canadian bacon or several pepperoni slices

8 fried eggs

8 (3-4-inch) slices mozzarella cheese (cut in half or on the diagonal)

Place muffins on a baking sheet and bake at 425F for 6-7 minutes. Remove from oven and top each muffin half with pizza sauce, vegetables, ham, egg and cheese slice. Return to oven and bake for another 8-10 minutes or until melted and bubbly. Yield: 4 servings

**Could also use prepared mini pizzas and top with egg and cheese slices.
