Caprese Tartlets from KiNiMi Kitchen

KiNiMi Kitchen Caprese Tartlets

Ingredients:
1/4 c extra-virgin olive oil
4-5 fresh mozzarella balls
1 t garlic powder or fresh garlic
1/2 t salt
6-8 grape tomatoes
1/4 c balsamic vinegar
6-8 fresh basil leaves
2 sheets of puff pastry

Directions:

  • Thaw the puff pastry sheets, for about one hour at room temperature on the counter
  • Meanwhile simmer balsamic, to reduce the vinegar and produce a glaze / drizzle
  • Mix together salt and olive oil & garlic
  • Chop basil to desired thickness
  • Cut puff pastry into desired shape and brush with olive oil mixture
  • Cut mozzarella balls ( slice or in half depending on preference)
  • Add cheese, basil and tomato
  • Bake at 375 until puffy and light golden brown
  • Drizzle with Balsamic vinegar reduction
  • Top with more basil
  • Enjoy!
