KiNiMi Kitchen Caprese Tartlets
Ingredients:
1/4 c extra-virgin olive oil
4-5 fresh mozzarella balls
1 t garlic powder or fresh garlic
1/2 t salt
6-8 grape tomatoes
1/4 c balsamic vinegar
6-8 fresh basil leaves
2 sheets of puff pastry
Directions:
- Thaw the puff pastry sheets, for about one hour at room temperature on the counter
- Meanwhile simmer balsamic, to reduce the vinegar and produce a glaze / drizzle
- Mix together salt and olive oil & garlic
- Chop basil to desired thickness
- Cut puff pastry into desired shape and brush with olive oil mixture
- Cut mozzarella balls ( slice or in half depending on preference)
- Add cheese, basil and tomato
- Bake at 375 until puffy and light golden brown
- Drizzle with Balsamic vinegar reduction
- Top with more basil
- Enjoy!
