Jicama Orange Coleslaw

Ingredients

1 small carrot, peeled and grated

1 large jicama, peeled and julienned

1 small bell pepper green, finely diced

1/2 Jalapeno, finely diced

3/4 cup mayo

1 Tablespoon honey

1 Tablespoon vinegar

Juice of one lemon

Cilantro, one small bunch

Mandarin oranges, 1/2 cup (one small can)

Directions

  • Mix mayonnaise, honey, vinegar, lemon juice cilantro, jalapeno, salt and pepper to make dressing.
  • Toss the vegetables together, then add the dressing.
  • Fold in oranges until well combined.
