Chef’s Market’s Chipotle Roasted Corn Avocado Toast
Avocado Toast Base (serves 2)
2 ripe avocados, mashed
¼ cup finely chopped red onion
¼ cup chopped cilantro
¼ teaspoon salt
Lime juice or lemon juice to taste
Chipotle Roasted Corn (serves 2)
2 small/medium ears of corn or 1 cup frozen corn
½ teaspoon chipotle pepper powder
½ teaspoon or more smoked paprika
¼ teaspoon or more black pepper
¼ teaspoon cumin
¼ teaspoon or more salt
Roast the corn:
Remove the corn from the cob with a sharp knife. You can use frozen corn kernels if out of season. Add to a heavy bottom skillet over high heat. Stir occasionally until the corn has a golden brown color. This should be about 5 to 7 minutes. Add the spices to the roasting corn pan, and mix well to coat.
Make the toast:
Toast a sliced baguette or bread of your choice. Spread the mashed avocado evenly onto each piece of toast. Top each slice with the roasted corn, chopped onion, cilantro, lime juice and a pinch of salt.
